They have to say that this place is not so easy to get to, but if they have a spirit of adventure can enjoy it a lot! Yes, because the pizzeria “L’Oasi dell’Antica Quercia” is not located on a normal road, with normal street signs. It is hidden and with no street signs… as it wants to encourage clients to find it. This place in Benevento, opened about three years ago by Ernesto Varricchio, former manager of a football field which probably transmit him passion for testing of new products and pizzas, starting from the flour. Varricchio combines different type of stone grounded flour in order to get intense flavour and smell. May be adding some malting barley. The whole dough he get is very pleasing. He uses a culture or a brewer’s yeast from Rolando Morandin. Furthermore, he mostly uses products with protected designation of origin “DOP”. Last but not the least, the oven: a revolvable oven fuelled with methane gas. All credit to this interesting experiments.
